Unlike Cornwall with its pasties and Devon with its cream teas, Sussex isn’t immediately associated with a particular culinary tradition. There may be good reason for this, since a quick search of historic Sussex recipes reveals dishes such as ‘Potato Pudding,’ ‘Sussex Pond Pudding,’ and ‘Plum-Heavies’ – perhaps not the most appetising selection!
In fact, modern-day Sussex is now well known for its contemporary cuisine. Here at Deans Place Hotel, we work with many local food suppliers whose passion for top-quality produce is shared by our chefs. We’re proud to have been awarded two AA Rosettes, and there’s no doubt that the quality of our ingredients has helped us to achieve this reputation.
Our suppliers include Wilderness Lane Honey, a family-run East Sussex business that cares deeply about keeping bees in the most sustainable and ethical way possible. This delicious honey is wonderful in desserts, and we use it as a key ingredient in unique recipes such as our mouth-watering Wilderness Lane Honey parfait with blood orange sorbet, sweet basil and honeycomb.
With coastal waters just a few miles away, we always have a good selection of fish on the menu. Locally landed fish such as
mackerel, cod and bream are used for dishes including pan-fried channel cod fillet, south coast mackerel cod fillets, or the classic favourite, fish pie. Meat and cheese is also sourced locally, as well as in-season vegetables bursting with freshness and flavour.

We can cater for any kind of diet, including vegetarian, vegan or gluten-free. Vegetarian options are available every day, but if you have particular dietary needs for an individual booking, don’t hesitate to discuss this in advance with a member of staff and we will be happy to accommodate you.

What we can guarantee is the very highest standards of culinary excellence throughout the hotel, whether you’re eating in the sophisticated Dining Room, the informal Terrace and Bar, or in one of our elegant function rooms.
